Recipe for Healthy Coconut and Chocolate Ice Cream

Ingredients

This makes 4 servings of 150 grams each.

  • 240 grams cashew nuts
  • 340 ml filtered water
  • 100 grams desiccated coconut
  • 20 grams cocoa powder
  • 25 - 50 grams agave syrup

Six Simple Steps to Make Coconut and Chocolate Ice Cream

  1. Mix the cashew nuts in a blender until they are finely ground.
  2. Add the filtered water, slowly, ensuring the mixture is well blended.
  3. Put the coconut and cocoa together and mix before adding them to the cashew and water blend.
  4. Add the agave to your mixture. 25 grams will make a dessert which is slightly bitter, whereas 50 grams will produce a sweet blend. However much you choose to add, make sure the ingredients are mixed together well.
  5. Put your mixture into a saucepan on a low heat and stir constantly to ensure it becomes smooth and doesn't stick or burn. The moment it starts to steam, take it off the heat. It should be very creamy and thick in texture at this point.
  6. Finally, pour your mixture into a container (or four separate containers) and freeze for about a day.
